Jalapeno poppers are cheesy and spicy fried goodness that you stomach will love but your heart will not.
I would love to tell you that they are healthy and you should eat them everyday but I’m sure I’ll get sued for misleading medical advice after your heart attack.
This recipe may seem like a little bit of work but it is actually very easy. Some recipes don’t call for blanching the poppers but I have found that they are a little too raw. You want a soft jalapeno that will still hold its shape.
Jalapeno poppers can also be frozen after step 5 so make several batches at once. On demand poppers isn’t a bad idea at all.
EDIT: So I’m changing this recipe. I’ve made these quite a few times and found that cutting the jalapenos in half is quicker and easier. Once you crumb them, you just chuck them in the oven. It is also faster.
- 200g parmesan cheese - grated
- 15 jalapenos
- 200g ricotta
- 100g vintage cheddar - grated
- Zest of 1 lime or lemon
- Juice of 1 lime or lemon
- 1 packet panko breadcrumbs
- 2 eggs - lightly beaten
- Vegetable oil for frying
- Salt for seasoning
Cut each jalapeno in half lengthways and carefully remove seeds and membrane.
Place the jalapenos in a pot of boiling water for 7 minutes. Drain and run under cold water to stop the cooking. Place the jalapenos on a paper towel to dry.
In a medium bowl, combine half the parmesan with the ricotta and vintage cheese, lime/lemon zest and juice then season with salt and pepper, stir to combine.
Fill each jalapeno half with mixture then place on a tray. Once all are filled, place the tray in the fridge for 30 minutes.
Combine the remaining parmesan with panko breadcrumbs in a bowl. Dip each jalapeno into beaten egg and then breadcrumb mixture then set on a lined baking tray. You may need to do this twice to get the crumbs to stick. Place in freezer for 10 minutes until crumbs are set.
Pre-heat oven to 160c fan forced
remove the jalapenos from the freezer and place in the over for 15 minutes or until golden. Remove from the oven and season with salt.
Eat all the deliciousness.
