Lemon Madeleines

Ok gents, do you want to impress someone special or maybe your parents and in laws are meeting for the first time. Well serve these little beauties with some tea or coffee and nobody will be unhappy.

These are the classic French madeleines. A delicious little lemon butter cake in the shape of a shell.

I’m not sure how authentic this recipe is but it works every time and tastes amazing.

I cook them for the wife for breakfast when I’m about to ask for something that she wont approve of. Nothing like buttering her up or just getting some points in the bank right?!

Anyway you will need the special madeleine tray which is available at all goof cooking supply stores or ebay.


  • 125gm butter - melted
  • 2/3 cup white sugar
  • 1 cup plain flour
  • 2 eggs
  • 1 tsp vanilla paste or essence
  • Zest or 1 lemon
  • Juice of 1 lemon
  • Pinch of salt
  • Milk to thin batter if needed
  • Caster or icing sugar for dusting


Step 1

Pre-heat oven to 180C fan forced.

Step 2

Mix the flour and sugar in a bowl then set aside. In a different bowl, add the eggs, vanilla, salt, lemon juice, and lemon zest then whisk until the eggs are frothy.

Step 3

Using a spatula, fold the wet mixture into the flour and sugar. Then add in the melted butter and continue to fold until a thick batter is formed. If it is too dry then add a tablespoon of milk at a time.

Step 4

Prepare the Madeleine pans. Using a pastry brush, brush the interiors of the shells with some butter so that they are well coated. Then lightly dust with flour.

Step 5

Fill each shell with 1 teaspoon of the mixture. Getting the correct amount takes practice.

Step 6

Bake in the oven for 8 minutes then turn the tray and bake for a further 6 minutes.

Step 7

Remove from the oven then tap out the madeleines onto a plate and dust with caster or icing sugar.

Step 8

Serve with tea, coffee or vodka. It is your choice.
