Everyone loves nachos. Nobody likes soggy corn chips. By segregating the chips and sauce these nachos wont leave you feeling disgusted, looking at a limp chip.
I use a pizza dish to serve but any large, low walled one will do.
1kg beef mince
- 1 brown onion - diced
- 5 cloves of garlic - crushed or finely diced
- 1 tsp cumin
- 1 tsp hot chilli powder
- 15 jalapeno slices - quartered (the ones in a jar not fresh jalapenos)
- 3/4 tbs jalapeno juice (from the jar) or white vinegar
- 4.5 roma tomatoes - diced
8 cherry tomatoes - quartered
- 50g tomato paste
- 1 soft avocado - squished
- 1/4 red onion - as finely diced as you can
- 1/2 tomato - as above
- 1 clove garlic (optional) - as above
- 1/4 tsp chilli powder
- Other stuff:
- 230g Corn chips - triangles
- 250g Sour cream
- Tasty cheese - grated
Heat up some olive oil in a saucepan and fry up the brown onion, when it starts to get tender add the garlic, cumin and chilli powder. After a minute or two add the tomatoes, let this simmer for a while.
Once the tomatoes have started to disintegrate add the beef mince and stir/squash it while it cooks to there aren't any large lumps. Once its almost cooked add the tomato paste and jalapenos and jalapeno juice. Leave this to simmer until it gets firm enough to scoop with a chip and isn't watery.
Combine all the guacamole ingredients in a bowl and mix together well, add a little bit of sour cream to smooth it out (I put in too much and mine went a little too light)
Once your sauce and guac are ready get your pizza dish and spread chips around the outside. Put the sauce in the middle and try to not let it touch the chips. Sprinkle cheese over the chips and mince then put under the grill until the cheese melts.
Remove from oven and create a crater in the middle of the sauce. Depending what your guacamole to sour cream ratio is either fill half of it with guac and the other half with sour cream or fill the entire thing with guac and create a new smaller crater for the sour cream.
Server and eat.
