So this is my take on the good old schnitzel burger. Tender chicken schnitzel with sweet teriyaki onions and creamy Kewpie mayonnaise.
I guess it is kinda Japanese with the teriyaki onions and Kewpie mayo but the shaoxing wine gives it a little bit of a Chinese flavour.
Seriously good stuff
- 2 chicken breasts
- 1/4 cup shaoxing wine
- 1 tsp corn flour
- 1 tsp chilli powder
- 2 eggs
- 1/2 cup flour
- 1 cup panko crumbs
- 2 onions - sliced
- 2 tbsp teriyaki sauce
- Kewpie mayonaise
- 4 burger buns - the bun maketh the burger
- Salt and pepper to season
- Oil for shallow frying
Mix shaoxing wine, chilli powder and cornflour in a large bowl.
Split each chicken breast through the middle to create schnitzels without the pounding. Place them in the bowl and stir to cover with the marinade. Cover and refrigerate for at least 15 minutes.
While the chicken is marinating, crack the eggs into a bowl and lightly whisk. Place the flour on a plate and season wit salt and pepper. Place the panko crumbs on another plate.
Remove the chicken from the fridge and crumb. Flour, egg then crumb. Place on another plate and return to the fridge for another 15 minutes.
Cooking time! Heat the oil in a large pan over a medium heat. Once hot enough, place the schnitzels in a cook until golden 4 minutes per side should do the trick (depending on chicken thickness). Place on paper towel to drain.
In a small pan, heat a 1 tbsp of oil over a medium heat. Add onions and fry till translucent Add teriyaki sauce and continue to cook for 2 minutes. Remove from heat
Split the burger buns and lightly toast (if your into that). From the bottom up: Bun > Lettuce > Chicken > Onion > Kewpie Mayo > Bun
