Tofu and Mushroom Larb

Quick and delicious, this can be easily made with any sort of meat or mince.

 

Ingredients

  • 300g Hard Tofu
  • 200g Mushrooms
  • 1 Stalk lemon grass, white part only
  • 2cm Ginger, grated
  • 2 Garlic cloves, crushed
  • 1 Cup coriander leaves
  • 1 Cup mint leaves
  • 1/4 Cup sweet chilli sauce
  • 2 Tbs fish sauce
  • Juice of 1 Lime
  • Roasted peanuts, unsalted and chopped
  • Rice noodles or rice to serve
  • 1 Onion, diced
  • 2 Tbs Peanut oil

Method

Step 1

Dice up your mushrooms and tofu into cubes of about 1cm then finely slice the lemon grass.

Step 2

In a hot wok add the oil and onion. Fry until the onion starts to soften then add the garlic, ginger and lemongrass. Cook for another minute or so.

Step 3

Add the mushrooms and tofu and cook until the mushrooms are soft. This is where you would add and cook the meat if you were using it.

Step 4

Add the fish sauce, chilli sauce and lime juice then heat through.

Step 5

Lastly throw in the corriander and mint then mix through.

Step 6

Serve on rice noodles with the peanuts sprinkled over the top.
